Meal Plan 3/1-3/7

Ok, sometimes I need to make what I want to eat. My kids like fish, but don’t like cilantro so I’ll set aside a little plain rice for them. Rice, beans, fish for the kids with a side of carrots and hummus or ranch and some fruit. All the good stuff for Ryan and me. I’m not the boss of you. Use chicken instead of fish for kids.. add avocado or mango or pineapple. Adapt where you need to.

Tuesday- spaghetti and meatballs & caesar salad

I cook these on the stovetop per the package directions, then drain them, add back to skillet with a jar of rao’s marinara and let warm on medium low. I add a splash of half and half or cream or fairlife milk to the empty rao’s jar, shake then pour and stir in with meatballs and sauce to make a little creamier. My kids all LOVE these. I serve theirs on shell noodles or orrechiette and usually eat mine on top of roasted sweet potatoes and brussels. Add fresh parm and basil if you’d like.

Wed- Leftovers

Th- grilled chicken, caprese salad, roasted broccoli

Favorite chicken marinade: 3 cloves garlic, ½ cup brown sugar, 3T spicy mustard, 1 t each salt and pepper, 6T extra virgin olive oil, ¼ c apple cider vinegar, juice 1 lime, juice ½ lemon (Thank you to Leslie & Matt for this recipe soooo many years ago. It’s still our favorite!)

Air fryer chicken tenderloin trick: marinate chicken, air fryer to 400 degrees, cook for 5 min flip and cook another 5 min

Fri- pizza & salad

Sat- Leftovers or chicken and cheese quesadillas   

Use leftover rotisserie chicken

Grocery List

  • Rotisserie chicken (Costco $5.99 or less ) 2.5 cups for the white chicken chili and the rest saved for quesadillas
  • Package of Italian style Simeks meatballs
  • 1lb firm white fish, like cod or halibut
  • Chicken breasts or tenderloins
  • 1 yellow onion
  • Garlic
  • 1 lemon
  • 4 Limes
  • 1-2 bunches Cilantro (topping for white chicken chili and used for fish tacos)
  • Avocado
  • Basil
  • Flavor bomb little tomatoes
  • Brussels sprouts
  • 2 sweet potatoes
  • Red cabbage
  • Jalapeno
  • Broccoli
  • Caesar Salad Bagged Salad
  • Fresh or frozen corn (about 1.5 cups)
  • Low sodium chicken broth (I use a 32oz container)
  • 24 oz. jar Raos Marinara
  • Extra virgin Olive oil
  • Spicy mustard
  • Mild diced green chilies (recipe calls for 1, I like to use 2)
  • Cumin, paprika, dried oregano, ground coriander, chili powder, smoked paprika, garlic powder, onion powder
  • Red wine vinegar
  • Apple cider vinegar
  • Olive oil or avocado oil spray (I use chosen brand avocado spray from costco)
  • 2 15oz cans Cannellini beans (I blend one drained can, the light cream cheese, and a cup of broth in my bullet blender)
  • 1 15 oz. can black beans
  • 1lb shell pasta, banza protein pasta, or orrechiette
  • Jasmine or basmati rice
  • Tortilla chips
  • Tortillas (organic flour from Costco are our favorite)
  • Shredded jack cheese
  • 1 8oz pkg Neufchatel cheese (light cream cheese)
  • Fresh parmesan
  • Full fat (or not) plain Greek yogurt
  • Pearl mozzarella balls
  • Shredded Mexican cheese
  • Queso fresco or cotija, optional topping for fish taco bowls
