Carrie’s Famous Salad

2-3 chicken breasts

6 cups Mix of spinach and arugula

1/2 cup cherry tomatoes, halved

1 Avocado, cubed

1/2 cup Pearl Mozzarella Balls, halved

1/4 cup fresh Basil, chopped

Perfect Chicken: season chicken breasts on both sides with a little salt, pepper, onion powder, garlic powder, and paprika. Sear in hot, oiled pan on both sides for a couple minutes then bake for 20 minutes at 350 degrees (check with meat thermometer to make sure 165 degrees) Shred or slice.

Toss first 5 ingredients with desired amount of dressing, add chicken and croutons and enjoy. Serve to your kids as is or deconstructed or with noodles. You do you 😉

  • About 5lb. Chicken Breasts (for grilling Sunday, on top of salad Monday, and bowls Tuesday. Gauge how much chicken you/your family needs)
  • 1 or 2 lb. ground beef (I usually double for lunch leftovers, but up to you)
  • Arugula (For arugula salad- toss arugula with a splash of olive oil, juice of ½ lemon, and sea salt)
  • 1lb. asparagus
  • Lemon
  • Fresh basil
  • 5 cups fresh spinach
  • 3 cups arugula cups
  • Cherry tomatoes
  • Avocado
  • Broccoli (24-28oz) or about 2 large heads
  • Fresh ginger
  • Garlic
  • Green onions and sesame seeds for garnish
  • 1 yellow onion
  • Noodles of choice, butter, and parm (for “kid pasta”)
  • Dry minute white or brown rice
  • 2 cups cannellini beans
  • 12oz. jar artichoke hearts
  • 2 4oz. balls burrata
  • Balsamic glaze (store bought or need balsamic vinegar and sugar for homemade)
  • Low sodium soy sauce
  • Honey
  • Sesame oil
  • Rice vinegar
  • Cornstarch
  • Dry orzo

  • 2 cups beef broth
