Sun- Taco Salad with Cilantro Lime Dressing
*my favorite way to make taco meat is with 93/7 lean ground beef. for every pound of ground beef, i add a 4oz can of mild diced green chilies, a dollop of tomato sauce, and a little splash of water. i use a packet of siete mild taco seasoning. brown all together, breaking meat up small as you go. it turns out rich and flavorful!

Mon- Spaghetti & Meatballs & Caesar Salad
*our family’s favorite storebought meatballs are the Simek’s Italian Meatballs. i place the entire bag in a skillet and add about 1/4 inch of water, cover and simmer about 15-16 minutes. Drain and add back to pan with a jar of Rao’s marinara. After pouring the marinara in, add a splash of half and half to the jar and shake it up then add to pan. Let heat up a few more minutes.

- 1lb 93/7 lean ground beef (double if you’d like more leftovers for lunch)
- 2lb chicken breasts
- ***Other taco salad ingredients (you do you!) – romaine lettuce, shredded cheese, salsa, avocado, sauteed peppers and onions, black beans, corn, cilantro, jalapenos, lime wedges
- I love having these things prepared for easy lunch bowls throughout the week
- Bag Simek’s Italian Meatballs
- bacon or turkey bacon (for burgers)
- 3-4oz salmon per person (if local to WSNC, I highly recommend the west end Sea Product’s salmon!)
- For burgers: 93/7 ground turkey (recipe calls for 1lb for 4 people so i get more), s&p, garlic powder
- Dressing Ingredients: olive oil, lime juice, mayo or greek yogurt, s&p, garlic, jalapeno, honey or maple syrup, cilantro
- 1lb spaghetti noodles (or other noodle of choice)
- Rao’s marinara
- Bag Caesar salad (I add extra romaine and sometimes fresh dill)
- Shaved Parmesan for spaghetti
- Panko Breadcrumbs

- Finely grated Pecorino romano or parmesan (or both)

- 2 sweet potatoes (peeled, sliced into “fries”, tossed with EVOO, s&p, garlic powder, onion powder, and a little smoked paprika– spread on parchment paper, baked at 400 for 20ish minutes (until fork tender)
- bag of french green beans (sauteed with chosen foods spray, s&p, garlic powder until cooked but not mushy. drizzle a tiny bit of honey at the end)
- box mac & cheese (Annie’s white shells are “GOATED” at my house)
