Sun- Easter Dinner (you probably already have a plan 😉 )
Mon- Pistachio Pesto Pasta with Grilled Chicken (I reserve some pasta with pesto without all the other ingredients for my kids. They can try the veggies without being overwhelmed. bless it.)
**make some extra grilled chicken for tomorrow’s dinner**
Pesto
3 cloves garlic
3/4 cup packed basil
1/2 cup raw pisachios
1/2 cup grated or shredded parmesan
1t salt
1/3 cup olive oil
Pasta
8 oz. bow tie or pappardelle pasta
1 cup sugar snap peas
8 stalks asparagus, tough stems discarded, cut into 4″ pieces
1/2 cup peas
1 T olive oil
8 oz. mushrooms, sliced
1 zucchini, cut into thin strips lengthwise
1/2 cup raw pistachios
2t sugar
1/4t salt
1t agave or honey
Directions: Process all pesto ingredients in food processor until desired consistency. Set aside. In saute pan, add olive oil and mushrooms, brown the mushrooms then set aside. Add more oil (or avocado spray) if needed and cook zucchini over medium-high heat, stirring occasionally, until golden brown. Bring large pot of water to a boil, add pasta and cook according to package directions. With one minute left in cooking time, add asparagus, sugar snap peas, and peas. Cook for final minute, then strain all. Return to pot, toss with pesto, sugar, salt, agave, mushrooms, and zucchini, 1/2 cup pistachios and a little pasta water if needed. Serve with fresh parmesan. Top with grilled chicken if desired.
Tuesday – Belly Full’s Cobb Salad (I like with grilled chicken! Can also use rotisserie. Make dressing or Trader Joe’s Buttermilk Ranch is great too) Deconstruct for kids, throw in some leftover pasta from yesterday. You know the drill.
