Meal Ideas Week of 6/22

Monday: Olivia Adriance’s One Pan Roasted Lemon Chicken and Potatoes

Use bone in, skin on OR boneless, skinless chicken thighs.

Tuesday: Janel’s Costco’s Mediterranean Crunch Salad with Rotisserie Chicken plus cheese of choice and cubed avocado

Combine one bagged salad, chopped rotisserie chicken, cheese, and dressing. Add avocado when serving.

Wednesday: Melissa’s Butter Lettuce Wraps with Trader Joe’s Soyaki Ground Beef

Cook ground beef with some Trader Joe’s Soyaki Sauce. Make lettuce wraps with some rice, beef, cilantro and peanuts. Deconstruct for your people as you wish

Thursday: Grilled Top Sirloin*, Spinach Salad, Mac & Cheese

*new favorite cut of meat lately. Cooks like a filet, but less expensive. I season with salt and pepper and a spray of avocado oil on both sides

Spinach salad: spinach, finely diced red onion, sliced mushrooms, tart cherries, Trader Joe’s spicy pecans, and feta with this delicious vinaigrette

Tip: cut up leftover steak into small pieces. Save for tomorrow to make steak and cheese quesadillas.

Friday: Steak and Cheese Quesadillas

                  Top with Pico de Gallo, Sour Cream, and/or Guacamole

If you don’t want a quesadilla, make for the kids, and add chopped leftover steak to some more spinach salad

Weekend: Leftovers, Sandwiches, Pizza, etc 🙂
