- 3 chicken breasts
- 1lb. Italian sausage (mild, sweet, or hot)
- 6 boneless, skinless chicken thighs
- PRODUCE
- Yellow onion
- Orange bell pepper
- 2 Lime
- 2 sweet potatoes
- Mini bell peppers
- Grape tomatoes
- Garlic
- Spinach
- Lemon

- Guacamole and pico and queso for chipotle bowls—buy (whole foods has great ones! Or make fresh)*

- Olive oil and vegetable oil
- Salt, garlic powder, cumin, chili powder, oregano, smoked paprika, cinnamon, onion powder, Italian seasoning
- 1 15oz. can tomato sauce
- Chipotle peppers in adobo
- Can white beans
- 1 15oz. can pumpkin puree
- 2 15 oz. cans white beans
- 15.5 oz. Jar salsa of choice
- 4 oz. can green chilies
- Spiral pasta (like fusilli)
- Canned or frozen corn
- Can black beans
- Can pinto beans
- Basmati rice
- Chicken stock
- Optional toppings for chili: chips or Fritos, green onions, sour cream, shredded cheese, whatever you like!
**Use salsa chicken either in tacos with similar topping ingredients as you used for the chili OR on top of sweet potato nachos
* Guacamole: 4 ripe avocados, red onion, chives, lemon and lime juice, jalapeno, s & p
*Pico de Gallo: 1.5 lb tomatoes, white onion, jalapeno, cilantro, lime juice, salt
*Queso: butter, white onion, garlic, canned fire roasted tomatoes, chili powder, garlic and onion powder, cumin and oregano, 2% milk, evaporated milk, shredded cheddar and jack cheese, cornstarch
